Marinated Radish Salad

The farmers markets here in Maine are bursting with fresh and beautiful radishes! I’m a huge fan – radishes are not only delicious but also packed with nutrients like vitamin C, calcium, folic acid, and potassium.

This delightful Marinated Radish Salad is a perfect blend of sweet, sour, pungent, spicy, and salty flavors. It’s a versatile dish that works wonderfully as a BBQ side, a vibrant addition to a cheese board, or a refreshing afternoon snack. Enjoy this seasonal treat!

Marinated Radish Salad
Serves 4

1 Bunch of Radish’s, trimmed and cut into quarters 

1/3 cup fresh Blueberries

1/2 cup chopped basil

4 Tbs chopped fresh chives

1 Tbs Avocado Oil

2 Tbs crystalized ginger finely chopped

4 Tbs fresh lemon juice

1 tsp grated lemon zest

Pinch of Pink Himalayan salt to taste 

Place the radish’s, blueberries, basil, and chives in a bowl. In a separate bowl mix together the avocado oil, ginger, lemon juice, zest and salt. Pour the marinade into the bowl with the radish’s and mix to coat everything evenly. Let it sit for at least 20 minutes to absorb the flavor! Fresh basil leaves, chive blossoms, or a lemon slice makes for a great garnish!  Serve and enjoy!
